I'd look at kiosk software (preferably configured for netbooting if you 
have enough ram) like Porteus http://www.porteus.org/  and similar.

Pretty sure Porteus has extra packages like libreoffice that you can 
drop in to the OS image for editing files on the USB drive.

Rather than USB may be better to store on the web with google docs (yuk! 
- sorry personal bias on the interface) or Zoho Docs (they may negotiate 
price for a good cause).
